Raspberry Scones

Mmm... scones. What is it about a scone that is so delightful? I always think of a cute little bakery... or breakfast when I think of scones. When I think about these scones, I realize I've made pretty plain scones in the past. They were always... well plain... no fruit, nothing. I will never make a plain scone again lol, these were AMAZING. Plus, I'm such a fan of berries, and even better, fresh berries. I feel like such a prestigious baker when I use the Babycakes recipe. I brushed them with coconut oil before baking and agave nectar after baking, they look very professional... and tasted great too!

Raspberry Scones

Makes: 8 (mine made 9)

Ingredients:
2 cups whole spelt flour
1 Tbsp baking powder
1/2 tsp salt
1/3 cup coconut oil, plus more for brushing
1 tbsp pure vanilla extract
1/4 cup hot water
1 cup fresh raspberries

Directions:
-Preheat oven to 350 F and line a baking sheet with parchment paper
-In a medium bowl, whisk together the flour, baking powder and salt
-Add the oil, agave nectar and vanilla and stir together until a thick, slightly dry batter is formed
-Pour the hot water into the batter and mix
-Gently fold the raspberries into the batter until they are marbled throughout using a rubber spatula
-Scoop 1/3 cup batter onto the paper for each scone, 1 inch apart
-Lightly brush the tops with coconut oil and bake in center rack for 14 minutes, rotating the sheet 180 degrees after 7 minutes
-The finished scones will be golden and slightly firm
-Remove from oven and brush with agave nectar
-Let the scones stand on the sheet for 15 min and then transfer to wire rack to cool completely
-Store scones in airtight container at room temp for up to 2 days

P.s. Jay would LOVE to be blogging (and baking/cooking) right now, but she's been super sick! She's had a severe virus, that even put her in the hospital for a few hours, since Tuesday (she had even bought delicious ingredients for a blog recipe!) and is only now getting better. I talked to her tonight and she is hoping she'll be able to make what she was planning on making last week, and then blog!
